The weather is warming, it must be time to go fishing. I can bottle the Chardonnay in the next few weeks and will put down the Sparkling Blanc de Blanc for "in bottle" fermentation shortly. (Methode Traditional) All the white this year have a nice acid finish. The 2010 Semillon just bottled is very pleasing and I need to catch a good feed of fish to have with it. It has some nice lemon lime characters. All I need is the weather to be on my side and it's dinner with the catch of the day and a crisp clean Hunter Semillon.
