We have created a system to feed grapes through the crusher destemmer and pump to fermenter or press via a cooling circuit. This has removed a lot of the manual work of getting grapes from bin to crusher. The grapes are 2009 Hunter Shiraz machine harvested. Since then the system has been further improved. When processing hand picked Hunter Semillon or Hunter Chardonnay grapes the cooling of the "grape must" allows pressing cold which helps a lot with the quality. I prefer all grapes to be hand picked even if it costs a little more.

Welcome to my wine blog

I started in 2005 with two mates producing 3 barrels of shiraz, one each, as a hobby.

We are now in-process to commercialize the winery while still retaining some of the features of the "winemaking club" that has evolved.

When this is finally approved we hope to release some of the wine for normal commercial sales.

We typical produce well known Hunter varieties Shiraz and Semillon and some Chardonnay as well Cabernet Savignon but using Mudgee grapes.
